For the bundt pan:

2 c. or slightly more very finely crushed roasted pecans

Cake:

Sift and measure 3 c. all purpose flour into a mixing bowl.

Add:

1 t. salt
1 t. baking soda

Mix with flour and sift again, set aside.

Cream until light and fluffy:

2 sticks room temp butter
2 1/2 c. granulated sugar

Add eggs, one at a time, beating well after each addition.

Add flour alternately with 1 cup sour cream, beginning and ending with flour. Mix at least 2 minutes.

Add one at a time, mixing very well after each addition:

1 t. vanilla extract
1 t. rum extract
1 t. coconut flavoring
1 t. lemon extract
1 t. almond extract

Continue beating mixture until it becomes shiny, about 3 to 5 minutes.

Spray bundt pan with non-stick cooking spray and coat with the pecans (do as you would if using flour)
Heat oven to 350º.

Pour batter into bundt pan, bake 1 hour or until a toothpick inserted comes out clean. Cool slightly and turn out onto serving platter.
