3 Lbs Carrots, cut into 1" pieces
3 Tbsp Butter
1 Tbsp Grated Fresh Ginger or 1/2 tsp Ground Ginger
1/4 Tsp Salt
1/4 Tsp Pepper
1/4 Cup Half and Half Cream

Directions:
Directions:
Boil carrots until very tender, 25-30 min. Drain and transfer to a food processor. add remaining ingredients. Whirl, scraping sides occasionally, until fairly smooth.
