Grandma Lazarchik's Potato Soup Recipe

8 Potatoes peeled
1 med or large onion diced
1 or 2 ribs of celery diced (optional)

Rock dumplings:
- 3 eggs (beaten)
- salt & pepper
- flour
- 1 stick of butter

Directions:
Directions:
Cut your peeled potatoes into small cubes, dice your onions and celery. Place in a medium pot and cover with water to about 2 or 3 inches above the potatoes. Add salt & pepper, and simmer until potatoes are soft. You can use a potato smasher to crush the potatoes or just leave the soup as is. Add the stick of butter.

While the soup is simmering, make your Rock Dumplings. Take your eggs, salt & pepper and whisk together, begin to add flour to the eggs working together until the dough is very stiff. When your potatoes are tender drop the dumpling by the spoonful into the simmering soup. (sometimes we make the dough stiff enough we can actually roll the dough into ropes and cut off pieces to drop into the broth.) Simmer until the dumplings come to the top. If your soup seems to be too thin at this time you can make a paste of flour & water and stir slowly into the soup until it seems thick enough.

After you refrigerate the left overs, and reheat the soup may be even thicker than when you first served it - I just stir in milk until it is the consistency you want it to be.
