1 lg. can refried black beans
1 lg. can whole black beans, drained
1 lg. yellow onion, chopped
1 poblano pepper, blackened, seeded and chopped or jalepeno, chopped
olive oil
1 T. ground cumin
1 T. oregano
1 T. chili powder
2 t. thyme
1 T. crumbled epazote
salt, pepper to taste
Toppings:
cilantro, chopped
plum tomatoes, chopped
red onion, chopped
feta cheese or cotijo cheese
nacho chips

Directions:
Directions:
In large skillet, add olive oil and sauté onions and poblano or jalepeno until golden. Add refried beans and whole beans, mashing up some of the whole beans. Add seasonings to taste and sauté mixture.
To serve, put bean mixture in serving dish, top with cilantro, tomatoes, red onion and cheese. Serve with nacho chips.
