Ingredients: 1 whole pork tenderloin, sliced into 8 pieces and pounded flat 3/4 cup fine dried bread crumbs 1/3 cup grated Parmesan cheese 1 tsp oregano 1 tsp salt 1/4 tsp pepper 1 small onion, chopped finely 2 T parsley, chopped finely 1 can stewed tomatoes or fresh tomato slices 6 red potatoes, peeled and cut into large fries

Directions:Cut whole pork tenderloin into approximately 8 pieces. Flatten by pounding on cut edges. Place meat on one side of generously greased (with olive oil) pan (like a large pizza pan). Mix all remaining ingredients except for tomatoes and place a layer of this bread crumb/cheese mixture on top of each piece of meat. Then cover each piece with a fresh slice of tomato or flattened stewed tomato. On other side of pan, add peeled potatoes cut into thick fries. Sprinkle fries with salt and pepper. You can sprinkle Parmesan cheese on top, if you wish. Bake at 350º for 30 minutes. Check meat, turn potatoes with spatula (they are now coated with oil on both sides. Continue cooking an additional 15 minutes or until potatoes are done. Potatoes can be crispy if you prefer. |

Notes: As you can see, we didn’t use veal. If this recipe was titled Pork Parmesan, you wouldn't have understood it. However, pork is less expensive and more readily available and is very tender. One pan cooking! Someone in our family called the potatoes “soggy french fries”, but they are really flavorful and good with or without the cheese.
