Ingredients: --Crusty Dough-- 1 (1/4 ounce) package active dry yeast 1 cup warm water 1/2 tsp salt 2 tsp olive oil 2 1/2-3 1/2 c. all-purpose flour
--Topping-- 1 large can Chef Pastorelli Pizza Sauce 2 tsp Oregano 2 T olive oil Salt & Pepper to taste 1 lb. mozzarella cheese 1/2 cup Parmesan cheese

Directions:Dissolve yeast in warm water in Kitchenaid mixing bowl. Add salt, olive oil, and 2 1/2 cup flour. Attach bowl and dough hook, turn to speed 2 and mix 1 minute. Continuing on speed 2, add remaining flour, 1/2 cup at a time, until dough clings to dough hook and cleans sides of bowl. Knead on speed 2 for 2 minutes. Place in greased bowl, turning to grease top. Cover, let rise in warm place until doubled in bulk (about 1 hr). Punch dough down. Brush 14" pizza pan w/oil. Roll out dough - 1st roll dough to genl. shape and let rest a few minutes. Finish rolling to shape of pan. Press dough across pan bottom forming collar around edge to hold toppings. Brush dough with 2 T of olive oil. Top with Chef Pastorelli Pizza Sauce. Add your favorite toppings, then sprinkle salt/pepper and oregano. Sprinkle generously with Parmesan cheese. Let rise 30 minutes if thicker crust is desired. Bake 15 minutes at 450º. Check bottom of crust. If slightly golden, then cover with 1 lb. grated mozzarella and return to oven for five more minutes. |

Notes: This dough recipe is from Kitchenaid. If you don’t have a Kitchenaid, you'll need to do mix/knead by hand. This is my mom's recipe and I now make it. Chef Pastorelli Pizza Sauce is the very best sauce you can buy! Add toppings: ground beef, Italian sausage, bacon, onions, olives, mushrooms, anchovies, etc. Substitute barbecue sauce for pizza sauce and use bacon and onions for southwestern pizza.
