6 center cut pork chops
3/4 cup chicken stock
1 small onion, sliced
1/2 green pepper, sliced
1 T oil
1 T butter
1 medium can (or fresh) chopped tomatoes, drained
1 clove of garlic, minced
1/3 cup ketchup
1 T Worcestershire sauce
salt & pepper to taste
4 cups cooked rice

Brown pork chops in frying pan. Remove to shallow roasting pan, add stock and braise in moderate oven (350º) covered for 20 minutes.

Meanwhile, make sauce: Saute onion & green pepper in butter and oil until soft. Add tomatoes, garlic, ketchup, and Worcestershire sauce. Season to taste. Add sauce to pork chops and continue braising in oven for 15 minutes or until tender. Spread over bed of rice.
