3 lbs. red potatoes, cut into 1" cubes (do not peel)
1/2 lb. fresh or frozen green beans
2 T olive oil
4 T red wine vinegar
1 tsp oregano or basil
1/4 tsp red pepper flakes
4 cloves garlic, minced
1 medium red onion, sliced into rings
Salt and pepper to taste

Place potatoes in 4 qt. pan and cover with salted water. Bring to boil. Cook, uncovered, until almost done (do NOT overcook). Cook green beans until almost done (do NOT overcook). Plunge beans into ice water to stop the cooking process. Put cooked potatoes, green beans and sliced onion in large bowl. Mix together olive oil, red wine vinegar, oregano, red pepper, garlic, salt and pepper. Pour over potatoes. Toss rather than stir so as not to break up potatoes. Serve warm or room temperature.

Variations: Add some cooked, chopped bacon or chopped black olives. If serving room temperature, try chopped fresh tomatoes. Note: my mother would not like these variations, but I read about them in other recipes, and they sounded good.
