8 boneless skinless chicken breasts
8 thin slices low fat ham
8 oz package of fat free cream cheese
8 slices Swiss cheese
2 egg whites
1 1/2 cups Italian seasoned bread crumbs

Directions:
Directions:
Preheat oven to 350

Pound chicken breast between 2 pieces of plastic wrap or wax paper using flat side of mallet starting in the center and working outward, until breast is 1/4 inch thick. Remove wrap repeat un til all breasts are pounded.

Place 1 slice of ham on each breast, then spread with about 1 ounce of cream cheese on top of ham. Place one piece of swiss cheese on top.
Start at short end and roll up tightly, securing with toothpicks so cheese does not ooze. Press edges in to seal.

Place egg whites in shallow bowl, beat slightly. Place bread crumbs in another shallow dish. Carefully dip rolled chicken in egg whites then coat all sides with bread crumbs.
Place chicken seam side down on a greased baking sheet. Bake at 250 degrees for 35 to 40 minutes.
Remove toothpicks before serving.

Low calorie and low fat dinner, serve with wild rice.
