Ingredients: 6 good size white potatoes cooked, cooled, peeled and sliced 6 hard-boiled eggs chopped 1/2 onion diced 1/2 to 3/4 c. celery Place in a large serving bowl. Dressing: 1c. Miracle Whip (I use Miracle Whip light, and add a little milk to make it smoother). 1-2 T. yellow mustard (or until Miracle Whip is light yellow) 2 tsp. vinegar 2 tsp. white sugar

Directions:Mix dressing well and add to potato mixture—some like it with more dressing, some with less. Salt to taste. Chill—best when it sits a while before serving. Some like this sprinkled with bacon.
For church potluck: 7-8 lb. potatoes (yes 7-8 pounds—take a long time to cook!!!) 18 hard boiled eggs 1/2 c. diced onions 1 1/2 to 2c. celery Dressing: 1 quart Miracle Whip 1/4 c. mustard (or until Miracle whip is light yellow) 2 T. vinegar 2 T. white sugar Mix in the largest Tupperware bowl. |
