1 pkg. 7 oz. small pasta shells
1can 14 to 16 oz. Italian diced tomatoes, drained
1 large tomato, diced
1 c. cubed part-skim mozzarella cheese
1/2 c. chopped red onion
1/3 c. sliced ripe olives, drained
1/4 c. minced fresh parsley
1/4 c. olive oil
1-1/4 tsp. salt
1/4 tsp. pepper

Directions:
Cook pasta to package directions; drain and rinse in cold water. In Large bowl, combine the pasta, tomatoes, cheese, onion, olives and parsley. Drizzle with oil; sprinkle salt and pepper. toss to coat. Cover and refrigerate until serving.
