3 eggs
1 cup brown sugar
1 cup oil
2 tsp baking soda
1 tsp salt
3 tsp vanilla
1 cup sugar
2 cups shredded zucchini
3 cups flour
1/4 tsp. baking powder
3 tsp cinnamon
1 cup chopped nuts
1 cup raisins
Directions:
Directions:
With electric mixer, beat eggs. Add sugar, oil and zucchini. Sift dry ingredients and combine with mixture. Add vanilla, nuts and raisins. Mix well.
Put in two greased and floured 5"x9" loaf pans. Bake for one hour at 350º. Cool before removing from pans.
