1-1/1 lbs. medium potatoes (red)
5 slices bacon
2 T reserved bacon grease
1 onion, chopped
1 T flour
1/2 tsp salt, pepper to taste
1/2 tsp celery seed
1/2 tsp dry mustard
1 T sugar
1/4 cup apple cider vinegar
2/3 cup water
1 T chopped fresh parsley
1 hard boiled egg, chopped

Directions:
Directions:
Cook potatoes (do not overcook). Peel and cut in half and then cut 1/4" thick slices. Set aside. In large skillet, cook bacon over medium heat until crisp. Remove bacon, crumble and add to potatoes. Cook onions until tender In 2 T of reserved bacon grease. Stir in flour, sugar, salt, celery seed, dry mustard, and pepper. Stir in water and vinegar. Cook and stir until thick and bubbly. Add potatoes and bacon to skillet. Toss to mix. Cook, stirring gently until heated through. Transfer to serving bowl. Garnish with chopped hard boiled egg and/or chopped parsley.
