2 lbs. flank steak or very thin sliced round steak (pound to make it thin enough)
1 lb. bacon
1 large onion, chopped
Toothpicks
Salt & pepper to taste

Directions:
Cut steak into long narrow strips (approx. 2 ½” x 6”). Sprinkle strip of steak with chopped onions and a strip of bacon that has been cut up into approx. 1” pieces. Roll the steak with bacon and onions inside, tuck in ends, and secure with a toothpick(s). Brown the rolls in a skillet with a little oil. Remove from skillet and place in pot of water (enough water to cover). Bring to boil and lower the flame and simmer for approx. one hour. Meat should be tender. When done, take out rolls and add salt/pepper to broth to taste. Thicken broth using flour/water mixture. Return rolls to gravy. Serve over mashed potatoes.

Very yummy. You can place in covered casserole, cover with water and bake at 350º until tender.
