2 pkgs. active dry yeast
1/2 cup warm water
1 T salt
2 cups lukewarm water
7-71/2 cups sifted all purpose flour

Soften yeast in 1/2 cup of warm water (110-120º). In Kitchenaid, using dough hook and #2 setting, combine salt, 2 cups of lukewarm water and add 2 cups flour. Blend in softened yeast. Blend in 4-1/2 to 5 cups flour or enough to make moderately stiff dough. Continue on #2 setting for two minutes. Coat dough all around with olive oil, cover with plastic and let rise until double in a warm location. Punch down, let rise again until double. Turn out on floured board. Divide in two. Cover and let rise ten minutes. Roll each portion into 15x12 rectangle. To form loaf, roll up tightly beginning at long side, sealing well as you roll. Slash diagonally across tops. Cover and let rise until double. Bake at 400º for 40 minutes.

If you don't have a Kitchenaid, you'll have to knead 10-15 minutes by hand. If you use fast-rise yeast, you only have to let the dough rise once before you turn it out on board and roll out.
