6 boneless, skinless chicken breast halves
Salt, to taste (optional)
3/4 cup onion, coarsely chopped
3 large garlic cloves, minced
1 tablespoon vegetable oil
1-1/4 cups chicken broth
1 cup medium red salsa or picante sauce
1 cup rice
1 ripe avocado, peeled and sliced
1 medium tomato, coarsely chopped
1/2 cup (4 ounces) cheddar or Monterey Jack cheese, shredded

Sauté green and red peppers with onion and garlic. When chicken and rice are removed from heat to absorb remaining moisture, stir in whole kernel corn or Mexican style corn.

Variation:
Add 1 can Mexican style corn OR
1 can whole kernel corn, well drained
1/4 cup green pepper, chopped
1/4 cup red pepper, chopped
