4 to 5 lbs potatoes ( about 6 russets)
Splash milk
1/2 to 1 stick butter
8 oz. cream cheese
1 tsp. salt
1 tsp. pepper
1/4 c. chopped green peppers (optical)
1/4 c. chopped green onions(optional)
1 egg

Directions:
Directions:
Cook potatoes and mash with milk and butter as you usually do. Add other ingredients and mix together. Put into a casserole dish. Refrigerates or pop in freezer until ready to use, just place them into the oven bake for 45 min. to 1 hour. You can put it under the broiler 1 to 3 min to brown slightly.f you do freeze them you must let them out to thaw before baking. This is great to make the day before. It keeps you from mashing potato on a busy day of your party.

Regardless of what rich goodies you fill them with, the key to good mashed potatoes is the potatoes themselves. Start by using a potato high in starch like Yukon gold or russets. They hold up better and are less sticky when mashed.
