1/4 cup red onion, chopped
2 cups plum tomatoes, chopped
4 leafs fresh basil, chopped
12 cloves garlic, pressed
salt/pepper to taste
1 T olive oil



--Step 2--
1 head garlic, roasted
1 tsp. olive oil
8 oz. goat cheese
1 T olive oil
--Step 3--
1 loaf crusty French bread
1/2 stick butter
1/4 cup olive oil
6 cloves garlic, pressed

Directions:
Directions:
Step 1: Chop all ingredients and mix together with olive oil in medium bowl. Let stand for several hours to let flavors blend.

Step 2: Roast garlic with 1 tsp. olive oil, wrapped in aluminum foil, in 250º oven for about 45 minutes or until soft. Peel garlic and mash with fork. Using fork, mash cheese. Then add mashed roasted garlic and 1 T olive oil and mix well.

Step 3: Slice bread into 1/2" slices. Melt butter, add olive oil and garlic and cook slightly, but be careful not to burn. Using brush, baste each side of bread slices with butter mixture. Place in flat pan and broil until light golden brown - flip if not browned enough on bottom. Remove from pan.

Step 4: Spread goat cheese mixture on each slice and then top with chopped tomato mixture.
