1 c. light brown sugar, firmly packed
1/2 c. all-purpose flour
1/2 c. chopped pecans (I use a "heaping" 1/2 cup)
2 eggs, beaten
2/3 c. butter, softened

Directions:
Directions:
Preheat oven to 350 degrees Line muffin cups with paper muffin liners. In bowl, stir together brown sugar, flour, and pecans. In separate bowl, beat eggs and butter together until smooth. Stir into dry ingredients until just combined. Spoon batter into muffin cups about 2/3 full. Bake for 20-25 minutes. Cool on wire racks when done.

Got these from my FL. sister in law.
These muffins do not dome up when baked. The tops will appear dry and shiny like pecan pie. They are super delicious, and not very pretty but well worth the sacrifice.
