5-7 lb. Prime Rib
3-4 T. course ground black pepper
2-3 tsp. garlic powder
2 tsp. ground rosemary
10-12 lbs. non-iodized rock salt

Directions:
Directions:
Mix spices to make rub, work into meat. Put 1-11/2" of rock salt in bottom of Dutch oven. Place meat in center then cover with rack salt, at least an inch above meat if possible.
Cook with 12-14 briquets on bottom with equal number on top. Put coals on and walk away for 3 hours for medium rare, the coals will die and the salt will keep the heat going. After 3 hours pull the meat out and remove all salt, a good stiff paint brush works well. Let meat sit 10 minutes then slice.
