2-3 lbs. yellow squash (zucchini works also)
1 stick butter
1 onion, chopped
8 ounces cheddar cheese, grated
1 1/2 cps. Pepperidge Farm herb seasoned stuffing


Directions:
Directions:
Slice squash. Cook squash and onion in salted water until tender. Drain.
Mash squash and onion with butter, add cheese. Place mixture in casserole dish.
Top with stuffing. Bake at 350 for 20-25 minutes or until cheese melts and stuffing begins to brown.

(Stuffing may be added into mixture instead of on top. Can be frozen before baking.)
