Spinach Stuffed Tomatos Recipe

Ingredients: 8 medium, unpeeled ripe tomatoes 8 slices of bacon 2- 10 oz. pkg. frozen chopped spinach 3/4 c. soft bread crumbs Grated cheddar cheese Salt and pepper Pinch of Ground Nutmeg Melted Butter Sour Cream

Directions:Preheat oven to 350º. Scoop out tomatoes and sprinkle inside with salt. Turn upside down to drain for about 1 hour. Cook bacon. Crumble and set aside. Cook spinach according to directions but only until just thawed. Drain well. Combine breadcrumbs, seasonings and finely chopped bacon and cheese. Stuff tomatoes with this mixture and place in buttered baking dish. Drizzle small amount of butter over tomatoes. This may be done ahead of time and refrigerated. bake uncovered at 350º for 20 minutes. Top each tomato with sour cream before serving. Add a little extra cheese on top until brown and bubbly. |
