Ingredients: 1 loaf Cuban bread (available at Publix) 1/2 lb. deli-sliced ham 1/2 lb. Cuban pork roast, sliced (or pulled pork shoulder) 1/4 lb. sliced salami 1/4 lb. sliced swiss cheese Several dill pickle slices per sandwich (I like the pickles that are cut into lengthwise slices) 1/3 cup mayonnaise 1/4 cup yellow mustard Softened butter

Directions:Mix mayonnaise and mustard together and set aside. Cut Cuban bread in half crosswise, then cut each half lengthwise. Spread each of the four halves of bread with a generous amount of the mayonnaise-mustard mixture. Place pickles along the bottom halves, then layer with the meats and cheese. Replace top half of each sandwich to make two large sandwiches. Spread the outside top and bottom of each sandwich with softened butter, then place in panini press (or you could use an iron skillet and weigh down the top of sandwich as it cooks). When the cheese has melted and the sandwich looks somewhat flattened, you're almost there. Now remove from pan and cut each sandwich in half on the diagonal. Best served with fried plantains on the side. |

Notes: When pressed and heated, the Cuban bread becomes crisp and crackly, contrasting against all the sharp flavors and textures inside the sandwich. Sometimes I like to add shredded lettuce and a slice of tomato, but Pata thinks that's heresy!
