2 cps cornmeal
1 tsp salt
1 c cracklings
1 c warm water or enough to make the dough soft
1 T oil

Directions:
Directions:
Mix all ingredient except the oil in the bowl. Heat the oil in a cast-iron skillet over medium heat. Pour the batter into the skillet reducing the heat to low. Cook for 12 - 15 minutes, until brown. Place a plate over the skillet and urn the skillet over to release the bread. Return the bread to the skillet to cook the other side over low heat for 15 minutes more, until well browned. Or the bread can be baked for about 35 minutes in the oven at 375 degrees instead. Cut into wedges to serve.

original recipe came from "Mama Dips Kitchen". Many cooks in Hartville made "cracklin" cornbread to serve with pinto beans or crumbled up in a cold glass of butter milk.
