2 cans white shoepeg corn, rinsed and drained
1 red onion, finely chopped
1 red or green bell pepper, finely chopped
1/2 cup oil, not olive oil
1/2 cup sugar
1/2 cup vinegar

Directions:
Directions:
Mix liquid and sugar and pour over veggies. Cover and let set overnight in refrigerator. Drain and serve.
