1 1/2 cup brown sugar
2 1/3 cup mazola oil
1 egg
1 cup milk (soured w/lemon juice)
1 1/2 cup rhubarb finely chopped
1 tsp vanilla
1 tsp salt
1 tsp soda
2 1/2 cups flour
1/2 cup nuts
Topping:
1/2 cup white sugar
1/2 tsp cinnamon
1 T melted butter

Directions:
Directions:
Mix sugar, oil, egg and sour milk (sour milk with 1 tsp lemon juice) in large mixing bowl. Add rhubarb and vanilla. Sift together dry ingredients and add to rhubarb mixture. Add nuts. Bake 325º for 40 minutes.
Topping:
Mix and sprinkle over buttered bread.
