1 c. sugar
1/4 c. soft margarine
1 egg
2 tbsp. low fat yogurt
1/2 c. milk
1 1/2 c. flour
1 tsp. baking powder
Grate rind of 1 lemon (or I put in a little lemon extract)

Directions:
Directions:
In a large bowl, cream sugar and margarine. Beat in egg and yogurt, then milk. In a separate bowl, mix flour and baking powder together, then add into egg mixture until blended. Stir in lemon rind or extract. Pour in prepared loaf pan and bake at 350ºF for approximately 1 hour.

**Alternately you can add about 2 tbsp. of poppy seeds, or put into mini muffin tins and bake for about 20 minutes. A glaze could be added to this as well.
