3 tbl. olive oil divided
1 med. onion, sliced
2 tsp. sugar
1/2 tsp. salt
2 c. assorted mushrooms
24 oz. fresh pizza dough
1 c. creamed cheese, softened
6 oz. shredded mozzarella and provolone cheese blend
2 c. shredded fresh spinach leaves

Heat 2 Tbl.oil in a large skillet. Add onions, sugar and salt. Cook over med.- low heat 30 to 45 min., until onions are brown and carmelized. Heat remaining 1 Tbl. oil in a large skillet. Add mushrooms and cook until they begin to release their liquid. Pre-heat oven to 450º Roll out dough into a 12 inch round or square. Spread cream cheese over top. Add half the mozzarella and provolone cheese. Add caramelized onions and spinach. Add mushrooms. Add remaining mozzarella and provolone. Bake 20 to 25 min., until crust is crispy and cheese is melted.
