1 can refrigerated Pillsbury Pizza Crust
1 lb. hot sausage- browned, drained and crumbled
2 c. Ore-lda O'Brien potatoes w/peppers and onions, thawed or shredded hash browns, thawed
2 c. shredded Sharp Cheddar cheese (you can add more or less or use your favorite cheese)
8-10 eggs + 1/4 c. water. beaten or 1 large carton of egg substitute
1/4 tsp. pepper - add to eggs
If you like you can add 1/2 c. mushrooms- depends on what the crowd likes. I add leftover sweet potato tater tots to this one (probably a cup and I mash them up little)

On a greased sheet pan or jelly roll pan- lay out pizza crust. Pull it up the sides a little. Crumble browned sausage mixture over crust. Sprinkle potatoes over top. Add cheese. Cover with the egg mixture.
Bake at 350º until crust is golden brown on bottom and eggs are set on top.
