10-12 whole, unpeeled carrots (fresh with green tops are best)
2 T. fresh whole thyme leaves, no stems (may substitute 1/2 T. dried thyme rubbed between your fingers)
2-3 T. olive oil
1 tsp. kosher or other coarse salt
1/4 tsp. ground black pepper

Preheat oven to 400º.

Wash carrots, pare root ends and trim tops so that only a small amount of green remains. Split large carrots in half lengthwise.

Cover a sheet pan with foil or parchment paper. Spread carrots on sheet pan and drizzle with olive oil. Season with salt and pepper. Toss carrots until evenly coated with oil, salt and pepper. Toss fresh thyme leaves over carrots and turn to coat.

Roast carrots in oven for 30-35 minutes, until golden and tender.
