1 squash peeled & cut up
2 pears peeled and diced
1 lg sweet potato peeled & cut up
2 med onions diced
6 C vegetable broth
1 1/2 T fresh ginger (do not have to peel)
1 can coconut milk
1 C white wine (opt)
salt to taste
garnish with finely diced red pepper

In a soup pot add broth, sweet potato, ginger and squash. Saute in a skillet onion till soft. Add pears cooking slightly. If using, next add wine. Cook 1-2 min then add to broth mixture. Add coconut milk & simmer till vegetables are tender. Garnish with red pepper.

My nephew Josh spent a few Thanksgivings in Erie, where we spent the holiday at a house on the lake. He made this soup and I fell in love with it.
