Ingredients: 1 Pkg. active dry yeast (scant Tbls.) 1 1/2 C. warm water 3 C. flour 1 Tbls. sugar 1 tsp. salt 2 Tbls. vegetable oil or soft butter 4 C. water 2 Tbls. sea salt

Directions:Add yeast to warm water; let sit 5 min.. Combine 1 1/2 C. flour,sugar,salt,and oil in a large mixing bowl. Add yeast mixture and stir until well- combined. Add remaining flour. Knead dough 3 min.; form into a ball. Let sit 1 Hr. Dough should double in size. Divide dough into 12 pieces and roll each piece into a ball (dust hands with flour to prevent sticking) Place balls on a cookie sheet or lightly floured surface. Let rest 15 min. Roll each piece into a 14-inch length and form into pretzel shapes. Or, divide each roll in half into 3 inch wide sticks. Let rest a few min.. Meanwhile, preheat oven to 450º. Grease a large cookie sheet . In a non-aluminum pot, bring remaining 4 C. water to a boil. Add pretzels to the boiling water in small batches and boil for 1 min., turning once, Shake off excess water. Place the pretzels on the cookie sheet and sprinkle with sea salt. Bake 10 min, until golden brown. Serve hot with or without mustard. |

Notes: Back in Old Rome Lent was strictly observed. The faithful could have no milk, butter, cheese, eggs, cream, or meat. With this restrictive diet,, what were the hungry masses to eat? They concocted cakes made from water, flour, and salt and shaped them into the form of two arms crossing over themselves, to remind themselves that Lent was a time for prayer. They called the breads little arms (bracellae). From this Latin word came the German word bretzels, which ultimately became pretzel.
