6 Green peppers
1 pkg. dried bread for stuffing or stale bread pulled apart
1 stick celery (diced)
1 med. onion(diced)
1/2 C. butter
salt and pepper
1 can mushroom soup

Directions:
Directions:
Wash the peppers and remove the tops and clean out the insides. Saute the onions and celery in a small amount of butter; combine them with the bread cubes, salt and pepper. Melt the 1/2 C. butter and pour over the mixture. Stuff the peppers with the stuffing and place them in a baking pan or dish. Mix mushroom soup according to the label directions and pour over the peppers.
Bake at 350 º for 1 hour or until the peppers are tender.
These can be served with mashed potatoes or just by themselves or with any side you like. Enjoy.

My friend Helen and I were visiting my niece Deb who is a vegetarian and we wanted to make something we liked that she could also eat. This was a recipe her Mom used to make during lent. You can make the stuffing according to your own family recipe to stuff the peppers.
