1 lb. Velveeta cheese, cut-up
1 small can corn with red and green bell peppers, drained
3 jalapeño peppers, seeded, minced
1 medium red onion, finely chopped
1/2 c. fresh cilantro, finely chopped
1/2 c. sour cream

Directions:
Directions:
Mix cheese and corn in a large microwavable bowl. Microwave on high 5 minutes or until cheese is completely melted, stirring after 3 minutes. Stir in remaining ingredients.

Serve hot with corn chips, crackers or fresh vegetables.

After it's hot, I put it in a small crock pot and keep it warm on low. This makes a fairly spicy dip; adjust the jalapeños to your tastes.
