1 c chickpeas
2 T olive oil
1/2 c vital wheat gluten flour ( natural foods section of grocery, Pittsburgh Co-op, possibly Walmart)
1/2 c bread crumbs
2 T soy sauce
2 cloves garlic minced
1/2 t lemon juice
1/2 t thyme
1/2 t basil
1/2 t oregano
1/4 t sage
1/4 c water

Directions:
Directions:
Mash chickpeas & oil in a large bowl leaving some lumps. Stir in flour, bread crumbs, soy sauce, garlic, lemon juice, herbs & water. Knead by hand 3-4 minutes or till flour forms strands and all ingredients are well incorporated. Roll into balls. Can wear gloves or keep hands wet to keep from mixture from sticking to them.
Lightly brush or spray with oil put on a parchment lined cookie sheet and bake @ 350º until lightly brown.

Made these for a picnic at Aunt Fayes a few years ago. People were taking these & commenting how good they were having no idea they were vegetarian. My husband was getting the biggest kick out of it because food we bring or eat often gets commented on or not tasted. Could be converts & not even know it.
