1 large package of lemon jello
2 c. boiling water
1 16 oz. cold Seven Up (or Sprite)
1 20 oz. can crushed pineapple (drain, save juice)
3 or 4 bananas
2 or 3 c. mini marshmallows
COOKED TOPPING:
1 c. pineapple juice (add water to make a full cup)
1 egg, beaten
2 T. flour
3/4 c. sugar
2 T. margarine or butter
8 oz. cool whip

Directions:
Directions:
Dissolve jello with boiling water, then add the cold pop. Refrigerate until slightly thickened, then add the crushed pineapple, bananas, and marshmallows. Mix well. Finish jelling. Make cooked topping by combining the juice, egg, flour, sugar and margarine. Cook until thickened like pudding. Cool completely, then fold in the cool whip. Spread over jello salad, refrigerate for half hour before serving.

Don't let the name of this recipe fool you - it's more a dessert than a salad. This is a family favorite especially during the summer. Very refreshing!
