Barley (not quick)
6 lemons (use 2 juiced rest as wedges on serving plate)
6 limes (same as above)
fresh parsley & cilantro
1 can water chestnuts sliced
1 pint grape tomatoes
olive oil
salt to taste

Directions:
Directions:
Cook about 1 cup barley (depending on size of crowd), drain & let cool. Chop parsley & cilantro. Chop water chestnuts. Half the tomatoes. Squeeze 2 lemons & 2 limes. Mix all together except for tomatoes. Add 1-2 T olive oil. Salt to taste. Tomatoes last (better if refrigerated for a couple of hours.) Looks like a lot of parsley & cilantro but isn't. Add juice to barley toss, then chestnuts & toss, next parsley & cilantro a little at a time & toss. Freeze remaining parsley & cilantro together for a later use. Spoon onto a serving platter surrounding outside with lemon & lime wedges to be taken & squeezed on servings.

I couldn't stop thinking about it & nagged for the recipe until I got it. When I think of their wedding I think of this salad also.
