2 avocados
1/4 c olive oil
1/4 c green onions chopped
1/2 c fresh cilantro chopped or flatleaf parsley if preferred
1 t minced jalapeņo
1 t minced ginger (does not need peeled)
5 medium sunchokes sliced into1/4 in strips
2 carrots cut into long thin strips
other options: jicama peeled & sliced, sweet potato peeled & sliced
1 T minced garlic
1/2 c red cherry or grape tomatoes diced
1 1/2 t salt
1/4 c fresh lime juice
1/4 c pomegranate seeds or to taste (makes this dish, don't leave out)

Directions:
Directions:
In a mixing bowl combine avocado & oil with masher, mash with a rapid circular stroke until fluffy. Fold in the green onions, cilantro, jalapeņo,ginger, garlic, tomato, salt, and lime juice. Form into a mound in the center of a serving dish. Surround it with sunchoke chips. For a sunny look, place carrot strips between the chips.
Sprinkle pomegranate seeds on top.

Makes about 5 cups
