Crisco (to grease cake pan)
1 Plain yellow cake mix (18.25 oz,)
1 1/3 C. water
1/3 C. crunchy or smooth peanut butter
1/3 C. veg. oil
3 large eggs
Topping;
2/3 C. light brown sugar
1/4 C. heavy (whipping cream) or evaporated milk
1/4 C. crunchy peanut butter
4 Tbls. (1/2 stick) butter (room temp.)
1 C. chopped dry-roasted peanuts

Preheat the oven to 350º Place the oven rack into the center of the oven. Grease a 9x13 cake pan with crisco and dust pan with flour. Set pan aside.

Place cake mix, water, peanut butter, oil and eggs in a large mixing bowl. Blend with an electric mixer on low speed for 30 sec. Stop the mixer and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and mix for 2 minutes more,, scraping down sides again if needed. The batter will be well combined. Pour the batter into the prepared pan
. Place the pan into the oven. Bake approximately. 30 to 35 min, Bake the cake until it springs back when lightly pressed with your finger. Remove the pan from the oven and place it on a wire rack to cool slightly.
Preheat broiler. If your broiler has a heat range set at medium. Place the oven rack one down from the top position.
Prepare the topping. Place the brown sugar, cream, peanut butter and butter in a medium. mixing bowl. Blend with an electric mixer on low speed until just combined, 30 sec, Spread the topping over the hot cake with a long metal spatula.
Place the cake under the broiler and broil until the topping is bubbly and browned,( 45 sec. to 1 min. Do not over cook. Remove the pan from the oven rack to cool. Sprinkle the chopped peanuts over the cake. Let the cake rest 10 minutes, then slice and serve
