2 Tbls.butter divided
3 Tbls. firmly packed dark-brown sugar, divided
1/2 apple, thinly sliced, sliced in half
1/2 large egg lightly beaten
2 Tbls. milk
Vanilla (a few drops)
1/4 C. flour
2 pinches of cinnamon divided

Directions:
Directions:
Put 1 Tbls. of the butter, 2 Tbls. of the brown sugar and the apples slices in the bottom of a coffee cup and microwave for 1 minute. Soften the remaining butter and mix in a measuring cup with the remaining sugar until creamy. Add the egg, milk and vanilla; beat with a fork to combine. Add the flour and the pinch of cinnamon beat until smooth.
Swirl the coffee cup to coat apples with the melted sugar and butter, sprinkle with a pinch of cinnamon. Pour the batter into a cup and swirl once. Microwave for 1 minute.

I use my 12 oz. Pyrex baking dishes for baking these cup recipes. I have used a 12 oz. cup. be sure to place on a plate to microwave to catch any spill over. I double the recipe since they use only 1/2 egg and then I have 2 one cup serving's. instead of one
