1 egg yolk
2 cups milk
2 tbsp minute tapioca
1/3 cup sugar
1/2 teaspoon salt
1 egg white
1 sq. unsweetened chocolate
2 tbsp. sugar
1/2 teaspoon vanilla

Directions:
Directions:
Mix egg yolk with small amount of milk in sauce pan. Add remaining milk, minute tapioca, 1/3 cup sugar, salt and chocolate. Place over medium heat. Cook until mixture comes to a full boil stirring constantly. This takes 5-8 minutes. (Do not over cook mixture.) Mixture thickens as it cools. Remove from heat. Beat egg white until foamy throughout. Add 2 tbls. sugar and continue beating until it will stand in soft peaks. Add to hot tapioca mixture stirring constantly. Add vanilla and cool. Serve in sherbets.
