2 env. gelatin, plain.
1/2 Cup Cold water.
1 Cup Hot water.
16 oz. of Cream Cheese.
2 Tbsp. Lemon Juice.
2 Tbsp. onion juice.
4 Cups cooked macaroni.
1/2 Cup chopped celery.
1 Cup Mayonnaise.
2 Tbsp. Parsley.
1 1/2 tsp. salt.
1 Cup canned milk.

Oil 2 round molds and set aside. Whip soften gelatin in cold water, add hot water and stir until dissolved. Add cream cheese in small pieces (May let stand over hot water in doubleboiler until cheese is melted). Cool slightly & add salt, lemon juice, onion juice, celery, parsley. When it starts to thicken, fold in macaroni & whipped milk. Turn into molds and cover with saran & place in refrig. When firm, unmold by placing hot towel under molds to loosen macaroni from rings. Turn onto serving plates over bed of lettuce leaves. Fill centers with your favorite chicken salad and garnish with half slices of spiced crab-apple all around. This is both delicious and beautifully presented for a summer salad meal.

Anne Miller and I fed our Circle and church staff and several take outs with this beautiful meal. The macaroni was so good, I could have eaten it all just by itself. Seems to me one could half the recipe and just serve the macaroni as a side. I like it better than cheddar cheese macaroni!
