1/2 c. butter
1 c. sugar
1 egg
1 1/2 tsp vanilla
1 1/2 c. flour
1/2 c. unsweetened cocoa
1/4 tsp. salt
1/4 tsp baking powder
1/4 tsp baking soda
38-48 maraschino cherries, well drained (reserve some juice)

For Frosting
1 c. semisweet chocolate chips
1/2 c. sweetened condensed milk
1/4 tsp. salt
1-1 1/2 tsp. maraschino cherry juice

Directions:
Preheat the oven to 350º. In a large mixing bowl cream together butter, sugar, egg and vanilla until light and fluffy. Add flour, cocoa, salt, baking powder and baking soda. Blend at low speed until a stiff dough forms.
Shape the dough into 1 inch balls using a heaping teaspoon of dough for each cookie. Place 2 inches apart on an un-greased cookie sheet. Push one cherry halfway into each ball. When all cookie are molded and cherries are inserted, prepare the frosting and use immediately.
In a small heavy saucepan over low heat melt the chocolate pieces with the sweetened condensed mild, stirring constantly. Remove form heat and add salt and cherry juice. Stir until smooth. Use immediately to frost the unbaked cookies.
Frost each cookie by spreading 1/2 tsp of frosting over the cherry. The frosting will spread over the cookie during baking. (I always use more frosting. It doesn't spread that much and you will have a lot left over so cover that cherry!) Bake the frosted cookies for 8 to 10 min until puffy. Makes 36-48 cookies.
