3 chicken cutlets
1 16 oz bag coleslaw mix
4 scallions sliced
1/2 lb. snow peas, cut diagonally
1 13oz. pack ramen noodles
1/4 c. slivered almonds
1 Tbs. sesame seeds
2 tsp. olive oil
oil & salt for saute'ing and toasting

dressing:
1/3 c. orange juice
2 Tbs. olive oil
2 Tbs. soy sauce
3 tsp. brown sugar
1 Tbs. lemon juice
1 clove garlic, crushed

Directions:
Directions:
Preheat oven to 350º F. Crumble Ramon noodles into a baking pan,discard seasoning pack. Add almonds and sesame seeds and 2 tsp. oil,toss to coat and bake for 10 min., stirring occasionally, till noodles are golden brow and cool.

Meanwhile saute' chicken in skillet with some oil & salt till well browned, approx. 3-5 min. on ea. side. When done shredd chicken into bite size pieces.

Combine dressing ingred. in a tightly closed jar and shake well till sugar dissolves.

Just before serving , combine shredded chicken with salad vegatables, top with toasted noodle mixture and drizzle with dressing.
