Directions:I saw this for two to three minutes on a TV show and I tried it ala me…. • Salt and Pepper steak and brown both sides in olive oil in a large cooking pot that has a good lid at a medium heat level. Not too hot, you’ll burn the olive oil! Remove when done. • Do the same with the country ribs. You don’t have to the season the sausage….just make some small cuts into them so they don’t burst. Add more olive oil as needed. Remove when done. • Cut up the onion and throw it into the pot and cook for two minutes then add the sliced or minced garlic, stirring occasionally, for another two minutes. • Add the wine and raise the heat to medium high for 2-3 minutes. • Turn down the heat to low. • Cut the flank steak into 2 inch pieces across the grain!!!!! Make sure it’s not with the grain….we want to be able to shred it later on. Hint it’s the shortest distance from one side to the other. • Cut the sausage into nice size chunks. • Add all the meat back into the pot. Add the jar of sauce and cover with lid. • Continue to cook at a very low temperature for 2 hours. • Pull out the flank steak and place on a large plate or cutting board. Utilizing two forks, I want you to use one to hold the steak and the other to start pulling the steak from the edge across the grain. The meat should pull apart nice and easy. Place back in the pot and stir. • Pull out the country ribs and pull it off the bone and shred as well. Put the meat back into the pot. • Cook for another ˝ hour and make some pasta to pour the sauce over. This is a great meal for a large crowd on a cold day! |
