1/2 cup flour
1 1/2 tsp salt
1/2 tsp paprika
1 cut up chicken (2 1/2 - 3 lbs)
1/2 cup hot shortening
1 envelope dried cream of leek soup mix
1 1/3 cups water
1/3 cup sherry
1 cup sliced leeks or green onions, include parts of green tops
1 cup evaporated milk
2 T chopped pimento, well drained
1 tsp dried parsley flakes
1/4 tsp poultry seasoning

Directions:
Directions:
Mix flour, salt, paprika in a paper bag. Shake chicken a few pieces at a time in flour mixture. Brown in hot shortening in a 10" skillet over medium heat. Drain off drippings.

In a small bowl, mix leek soup mix, water and sherry. Pour over chicken. Arrange sliced leeks over chicken. Cover and cook over low heat 35 minutes until drumstick is tender when pierced with a fork. Place chicken on serving platter. Stir evaporated milk, pimento, parsley flakes and poultry seasoning into liquid remaining in skillet. Cook and stir over low heat until mixture thickens and steams. Do not boil. Pour sauce over chicken.
