1 garlic bulb
3 medium onions cubed
3 medium zucchinis peeled ans cubed
3 large potatoes peeled and cubed
6-8 c. water
1 Tbs salt

Directions:
Directions:
Using a sharp knife slice off pointed edge of garlic bulb,exposing individual cloves of garlic. Drizzle oil on top of cloves and wrap bulb tightly in foil. Bake at 350º for 1 hr. In a 4 quart pot saute' onions in a bit of oil until golden. Add zucchinis , potatoes, water and salt. Simmer on medium flame for 45 min. stirring occasionally. When the garlic is roasted , cool for a few minutes, remove from foil and squeeze the cloves into soup. Blend soup with immersion blender.
