1 pound kidney beans
3 quarts water
1 cup onions, chopped
1 cup celery, chopped
4 bay leaves
1 cup green bell pepper, chopped
4 Tablespoon garlic, chopped
3 Tablespoon parsley, chopped
2 teaspoon dried thyme,crushed
1 pound andouille sausage, cut into 1/4 inch pieces
1 ham bone in cut into chunks
1 Tablespoon of salt
1 Tablespoon black pepper
1/8 teaspoon Tabassco sauce

Directions:
Directions:
Remove the bad beans: rinse throughly.
In 10 quart pot combine beans, water,ham, and andouille sausage and onion,celery and bay leaves.
Bring to a boil: reduce heat.
Cover and cook over low heat, for about 11/2 hours or until beans are tender.
Add green pepper, garlic, parsley, thyme and salt,pepper.
Cook uncovered over low heat until creamy about 30 minutes.
Remove bay leaves.

Serve over rice
