8 chicken breasts

3/4 cup sliced carrots
3/4 cup sliced celery
diced onion - divided
1/2 cup sliced fresh mushrooms
1 - 8 oz. can tomato sauce
1 - 6 oz. can tomato paste
1 - 16 oz. can diced tomatoes
1 Tbsp. Italian seasoning
3/4 tsp. sugar
2 tsp. dried parsley

Filling:
1 cup cottage cheese
1/4 cup grated Parmesan cheese
1 Tbsp. diced onion
1 tsp. Italian seasoning
1 Tbsp. parsley flakes
1/2 cup grated Mozarella cheese

2 cups shredded Mozaralla cheese for top
Cooked linguini - enough for 6 to 8 people

Directions:
Saute vegetables in oil. Add tomato ingredients and seasonings. Simmer for about 30 minutes to blend flavors.

Meanwhile, flatten chicken breasts to about 1/3 inch thick. If breasts are thick, you can slice them in two. Chicken should be about 6 inches in diameter.

Mix together ingredients for filling. Divide filling among pounded breasts. Roll up tightly and secure rolls with a toothpick. Place, seam side down, in a lightly greased baking dish. Cover with prepared tomato sauce. Cover with foil or lid and bake at 375º for 45 minutes to an hour until chicken is done. Remove from oven and cover with grated Mozarella cheese. Bake an additional 5-10 minutes until cheese is melted.

Serve on top of a bed of cooked linguini.
