1 Tbsp. olive oil
1 can (15oz) cannellini beans, drained and rinsed
3/4 c. onion, finely chopped
2 cloves garlic, minced
2 c. zucchini, cubed
1 Tbsp. Italian seasoning
1 box beef broth (32oz)
2 c. baby spinach, coarsely chopped
1 can (14.5oz) Italian tomatoes, diced
1 pkg. cheese tortellini, frozen
Parmesan cheese, grated

In a dutch oven, heat olive oil over medium high heat. Add onion, garlic and Italian seasoning. Cook until onion softens, ~ 2 to 3 m. Add broth and tomatoes and bring to a boil. Stir in tortellini, beans, and zucchini. Reduce heat and simmer until tortellini is tender, ~ 5 minutes. Add salt and pepper to taste. Remove from heat and stir in spinach. Ladle into bowls and top with parmesan cheese.
